Cranberry oatmeal breakfast cookies

This morning I woke up and it was actually "chilly". By that I mean we were in the 50s (I know, I know it's not THAT cold). It was the kind of morning that called for something warm out of the oven. Preferably something that little c could eat for breakfast. So I whipped up a batch of Cranberry oatmeal breakfast cookies. They are even vegan, sugar free, and can be gluten free!

Cranberry Oatmeal Breakfast cookies (adapted from Wise Bread)

3 1/2-4 ripe bananas
1 tsp vanilla
1/4 cup apple sauce
1Tbsp agave
2 1/4 cups uncooked oats (quick cooking variety)
1/2 cup dried cranberries
1tsp cinnamon

Preheat oven to 325 degrees. Add first four ingredients to large bowl and mash together. Stir in oats and let sit 5 minutes. Stir in dried cranberries and cinnamon.

Drop teaspoonfuls of batter on greased cookie sheet. Bake 20-25 minutes. Allow to cool and enojy!

  2. um...not likely. They may already been gone. The little gnome that raids the fridge on his own got to them.
